  • 1 cup Sour Cream
  • ½ cup Basil Pesto
  • 3 tbsp grated Parmesan Cheese
  • Take all the ingredients and blend until smooth.

Sicilian Easter Soup


For Meat Balls
  • ½ pound ground Beef
  • 1 tbsp chopped Parsley
  • 1 Egg
  • 1/3 cup Bread Crumbs
  • ½ tsp Salt
  • 2 tsp Romano Cheese
  • 1/8 tsp Pepper
For Broth
  • ¼ cup Water
  • ¼ tsp Pepper
  • 3 cups Chicken Broth
  • 3 Eggs
  • 1 tablespoon grated cheese
  • 1/2 pound Ricotta
  • 1 tbsp Parsley, chopped
  • Salt to taste
  • Mix broth and water in a saucepan and place it on medium heat.
  • Knead all the meatballs ingredients, make the balls and drop them into the boiling broth. Simmer it for 45 min.
  • Now, whip the remaining eggs in a bowl and whisk in ricotta, cheese, salt and pepper and blend the mix well.
  • Add this mix to the soup, simmer it for 10 more min, and remove from flame. Serve hot.
Strawberry Spinach Salad

  • 1/3 cup Oil
  • 2 tbsp Honey
  • 3 tbsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 1/8 tsp Salt
  • 8 cups Baby Spinach Leaves
  • 2 cups Sliced Strawberries
  • Cinnamon, a pinch
  • Mix oil, honey, cinnamon, lemon juice, mustard and salt in an air-tight jar and shake well. Refrigerate this dressing till the serving time.
  • Toss spinach and strawberries gently together and set aside. When serving, pour the dressing over the veggies and toss the salad for an even coating.
Honey Butter Ham

  • ¼ cup Butter, melted
  • ½ cup Honey
  • 2/3 cup Brown Sugar
  • 2 tbsp Dijon Mustard
  • Whole Cloves
  • 3-5 pound Half-Ham (fully cooked)
  • Preheat oven to 3250F. Blend melted butter, honey, brown sugar and mustard till smooth and set aside.
  • Place the cooked ham in a roasting pan and make diamond shaped patterns on its surface with cuts about 3/4" apart. Take the whole cloves and push the stem of a clove into the centre of each diamond.
  • Coat the ham with half the butter mix and roast uncovered for 20 min. Now coat apply the remaining butter mix also in the same manner and roast for another 20 min (uncovered) then baste the ham with the pan drippings.
  • Roast this setting for another 35 min or till the ham is hot and glazed.
  • Make thin slices to serve.
