Cake
- 1½ cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup white sugar
- ½ tsp salt
- ½ tsp vanilla
- 1 tbsp white vinegar
- 5 tbsp vegetable oil
- 1 cup pineapple juice
Icing
- 2½ cup tbsp flour
- 1/8 tsp powdered ginger
- ½ cup milk
- ¼ cup butter
- ½ cup cream cheese
- ¼ tsp salt
- 1 cup icing sugar
- ¼ cup crushed pineapple
Preparation Cake
- Sift flour, baking powder, baking soda, sugar and salt into a bowl.
- Put pineapple juice into a saucepan and heat to lukewarm. Add a small quantity of crushed pineapple to it.
- Add vanilla, vegetable oil and vinegar to the mixture of sifted ingredients. Quickly pour lukewarm pineapple juice into the bowl and beat the whole mixture well.
- Preheat oven for 10 minutes at 350 F.
- Pour the batter into an ungreased pan and heat it for 30 minutes at 350 F
Icing
- Mix flour, powdered ginger and milk in a small saucepan and cook the mixture over medium heat. Stir the mixture contantly and heat it until it forms a thick paste.
- Cool the mixture till it is lukewarm.
- Mix butter, cream and crushed pineapple together.
- Add lukewarm flour paste, salt and icing sugar to the mixture. Beat until the mixture is fluffy. Refrigerate the mixture for an hour to firm up the icing.
- Put the icing on the cooled cake.
