- 7 lb. chicken
- 2 head garlic, separated into cloves
- 2 sprig fresh rosemary
- 4 tbsp olive oil
- 2 tbsp chopped parsley
- Salt and pepper to taste
Preparation
- Preheat oven to 250 C
- Wash the chicken thoroughly and season it with salt and pepper.
- Mix chicken, garlic, olive oil and rosemary. Place it in oven without lid and cook for 15 minutes.
- Cover with lid and continue cooking one hour until chicken is tender.
- Peel the roasted and set it aside. Cut chicken into serving pieces and place on warmed platter. Skim fat from juices and pour over chicken.
- Sprinkle with parsely. Decorate with peeled roasted garlic and serve with vegetables and potatoes.
